Spherù

Spherù is our version of the Lebanese Kechek el Fouqara, also known as the poor man’s cheese.
Originally from a poor and rural area of ​​Lebanon, this product was traditionally created to recreate something reminiscent of goat cheese, widespread in the richest areas of the country that had access to milk and could afford to raise cattle.

This recipe was therefore born, right from the start, 100% plant-based and is characterized by the simplicity of the composition: Bulgur (cracked wheat) fermented in brine and then dried to form the characteristic spheres which are then marinated.

The top quality extra-virgin oil that we use and the native herbs from the uncontaminated nature that surrounds us help to characterize the product and give it a strong identity linked to the territory.
Excellent on a seasonal salad or as a snack during an aperitif.
Perfect spread on a hot and fragrant focaccia.

We would like to emphasize that our products are not currently heat treated, nor pasteurized or treated with preservatives.
They are live foods, with their own beneficial bacterial load for our intestinal microbiota and our immune system.
These products therefore continue their maturation process often changing organoleptic and physical characteristics.
